JOYCE FERNANDES has brought the preparation of Goan cuisine within the grasp of many a housewife through her highly popular series of cookery books. This month Joyce gives you more recipes to add spice and flavour to your lunch and dinner.


soup bowlCREAMED VEGETABLE SOUP

1 potato, 1 carrot, few cauliflower florets, 8 french beans, 2 tbsps green peas, 1 tomato, 1 onion, 2 flakes garlic, 2 cups water, 1 tsp flour, 1 cup milk, 2 soup cubes or salt, dash of pepper and 2 tbs butter.

Peel and chop the vegetables and boil them in a cup of water. Cool and blend in a mixie till creamy. our this mixture into a pan and set aside. Mix flour in a little water and stir into the milk. Keep the pan on the fire, add milk mixture, a cup of water and the remaining ingredients. Allow to boil for 2 or 3 minutes.


ALMONDEGAS DE BACALHAU (Cod fish cutlets)

250 gms bacalhau, 600 gms potatoes (boiled and mashed), 1 egg (beaten), 50 gms flour and olive or vegetable oil.

Soak the bacalhau overnight. Boil for 10 minutes, remove the skin and bones and mince. Mix the minced bacalhau, mashed potato, salt and pepper to taste and egg. Shape into cutlets, coat with flour and fry in hot oil.


CALDEIRADA (Fish in vegetable layers)

500 gms any fleshy fish, 3 large onions, 2 large potatoes, 2 large capsicums, 2 large tomatoes, 5 flakes garlic, 1 inch ginger, 2 tbs olive or vegetable oil and 2 soup cubes mixed in a cup of water.

Clean and slice the fish. Slice the next 6 ingredients round. Take a large pan heat the oil, place a layer of sliced vegetables, then fish slices, lastly another layer of vegetables. Add stock and cook over slow fire till fish and potatoes are done


MIXED MEAT STEW

500 gms beef (cubed), 250 gms pork (cubed), 250 gms chicken meat, 2 large Goa spicy sausages, 1 tbs oil or fat, 2 onions (chopped fine), 2 tomatoes (chopped fine), 2 tsps ginger-garlic paste, 2 carrots (cubed and boiled), 2 potatoes (cubed and boiled), 1 cup peas (boiled), 100 gms macaroni (boiled), 1/2 tsp Spice Powder No.2, 1 1/2 cup milk and vinegar.

Boil the beef in salted water and keep aside. heat oil and fry the next 3 ingredients till onions are tender. Add the boiled beef, fry well, then mix in the pork, sausage-meat and stir-fry. Add chicken and 2 cups of water. Cook till all the meats are tender. Add all the boiled ingredients, spice powder and milk. Salt and vinegar to be added only if necessary. Simmer for 3 minutes.
